The difference between fruit vinegar and edible vinegar

We usually think of vinegar as a common condiment, used for stir-frying, cold dishes, or as a dipping sauce. Now, fruit vinegar—a nutritious vinegar beverage—has become popular throughout China. Fruit vinegar is made from fruits such as apples, citrus fruits, mulberries, and red dates through acetic acid fermentation.

 

Because fruit vinegar has the effects of relieving fatigue, resisting aging, beautifying skin, and preventing obesity, many women adore it, even drinking it as a daily beverage. However, media reports have shown that a woman, in an attempt to lose weight, drank fruit vinegar as a weight-loss beverage for a long time, resulting in gastric ulcers and requiring hospitalization.

 

In response, He Jiguo, associate professor at the College of Food Science, China Agricultural University, told reporters that the pH of general fruit vinegar is around 3, which is highly acidic. Long-term consumption can indeed cause some corrosion to the gastric mucosa. Therefore, people with poor gastrointestinal health, especially those who already have gastric ulcers, should drink less or no fruit vinegar. Those with healthy gastrointestinal systems should also drink fruit vinegar in moderation, not exceeding 200 ml per day, and drink it after meals, as drinking fruit vinegar on an empty stomach causes stronger irritation to the gastric mucosa, easily leading to stomach pain and other discomfort.

 

It is also important to remind everyone that although fruit vinegar aids digestion, most fruit vinegars have a high sugar content. Relying on it for weight loss is limited in effectiveness, and may even lead to weight gain due to high sugar intake. If used for other health purposes, it can be diluted with water at a 1:1 ratio before drinking, or some soda crackers can be eaten while drinking fruit vinegar to reduce irritation to the stomach.

 

Apple cider vinegar is an acidic substance that creates a favorable acidic environment in the body. However, this acidic environment can worsen the condition of patients with ulcers or stones, so such patients should drink it under the guidance of a doctor.
